The cooler weather calls for warm, hearty meals. I’m thinking soups, roasts, meat loafs, you get the jest. Comfort food is notorius for being not so healthy, but with a few ingredient swaps you can turn that not so healthy meal into something a little heathier, without sacrificing taste or that warm cozy feeling you get from eating it.
Meat loaf is usually made with ground beef, milk, bread or bread crumbs, among other ingredients. I use lean ground turkey meat, oats and skip the milk and then add some additional ingredients, that combined together taste so delicious you will forget that it’s good for you! Plus all you have to do is combine all of the ingredients and throw in the oven, making it a super quick and easy meal!
-1 1/2 lbs. lean ground turkey meat
-1 large egg
-1 large tomato, diced
-1 bell pepper, diced
-1/2 cup rolled oats
-1/4 cup slivered almonds
-1/4 cup raisins
-1/4 cup chia seeds
-ground black pepper
1. Preheat oven to 350 degrees F. Combine all ingredients in a bowl and mix together with hands.
2. Form into meat loaves. I made 4 small ones, this way I can freeze two of them for a later date (comes in handy on nights you just don’t feel like cooking!).
3. Put meat loaf on baking pan and put in oven (spray pan with PAM spray before putting meat loaf on it. I usually put tin foil down on pan and spray that, then put loaf on top. Makes for quick and easy cleanup). Cook for 45 minutes, let cool and it’s ready to eat. I like to serve with a side of roasted veggies (whatever is in season).
